Bubbles 101 – We want to burst your bubble with our champagne class / Oak Mountain Winery’s Sparkling Wine Class will have you taste three of our handcrafted sparkling wines made and bottled here in Temecula.  You will be served 3 of our sparkling wines paired with artisanal cheeses.  Learn fun facts you always wanted to know about sparkling wines and champagne.

Blending Reds – Create, bottle and label your very own blend / In our Blending Class, you get to be the Winemaker!  You will be supplied with three of Oak Mountain’s red wines, Cabernet Sauvignon, Cabernet Franc and Merlot, tasting notes, a measuring flask and pipette, three wine glasses for sampling your creation and a “cheat sheet” provided by our own winemaker to help you with the process.  You will have the option to bottle your custom blend of wine for an additional $29.  We will then pop in a cork and add a personalized label and you’ll take home wonderful memories – as well as a one-of-a-kind bottle of wine.

Wine Tasting for Dummies 101 / Our beginners class for Wine Tasters.  This is a good class to take if this is your first visit to a winery and want to know the basics of wine tasting.  You will taste three wines paired with delicious gourmet cheeses and dark chocolate toffee.  You will also get to sample eight of our infused Avocado Oils and Balsamic Vinegars that are only available at Oak Mt. Winery.

Rhone Wine Class 201 / Our second, more advanced class after taking Wine Tasting 101 is our Rhone Wine Tasting Class 201.  Learn how these grapes are grown here in the valley and how wine is made, while tasting varietals from different areas in the Rhone region of France.  Just like the 101 class, you’ll get 3 wine tastings and 8 tastings of Avocado Oil and Balsamic Vinegars.

Bordeaux Wine Class 201 / You will learn how these grapes are grown and how they are harvested and processed, while tasting Oak Mountain wines from different areas in the Bordeaux region of France.  Just like the 101 class, you will get 3 wine tastings and 8 tastings of Avocado Oil and Balsamic Vinegars.  We recommend that you have taken our Wine Tasting 101 class prior to this course.

Temecula Valley Vineyards See Early Budbreak

Despite the abnormally wet December and SNOW (!) in January, winter just didn’t last long enough in Temecula Valley’s wine country to keep spring at bay.

“We thought last year was early”, said Steve Andrews, Oak Mountain Winery’s owner and winemaker, “but we’re already seeing some “pushing” on our hillside vineyards”.  And “pushing” leads to budbreak, which is exactly what JD Harkey, of Drake Enterprises, a local farm management company, reported today.  JD shared the photo above, showing actual bud- break on a head-pruned Zinfandel vine he saw just this morning.

“It’s the earliest budbreak I’ve ever seen”, said Harkey.  “It’s going to be an interesting harvest!”

While delaying pruning as long as possible – sometimes into January and early February – often results in later budbreak, this year is proving challenging for local vineyard managers.  An early budbreak can be devastating to a vineyard if a late spring frost comes along, particularly if the buds have begun to flower, which is the pre-cursor to fruit set.

We were lucky last year, which was also a record breaker for early bud break here in Temecula.  We were thankful for a nice, long and temperate spring season that allowed the fruit to develop fully and evenly throughout the valley. In order to obtain a gambling license in Australia, it is first necessary to understand and study the laws of Australia and each state separately. The main law that regulates gambling is the Interactive Gambling Act passed by the Commonwealth Parliament of Australia in 2001. This law also made legal and regulated online gambling. And in 2021, an amendment requiring additional licensing of casino games https://www.ilucki.com/en-AU establishments by Australian authorities was introduced, which also added ways for players to opt out of gambling protection. And while we all know that Mother Nature does what she wills, we’re hoping she slows things down a bit.  We want more winter!

Wine Country Recipe: Cheese Fondue

Nothing screams romance more than fondue!  So, this Valentine’s Day, if you’d prefer to forgo the crowded restaurants and opt for a quick, simple and romantic meal at home, we’ve got you covered with this cheese fondue recipe.  Pair with a salad, your favorite Temecula Valley Riesling and perhaps some chocolate fondue for dessert…and…voilà, you’ve got the perfect Valentine’s dinner.

Ingredients:

1/2 pound imported Swiss cheese, shredded
1/2 pound Gruyere cheese, shredded
2 tablespoons cornstarch
1 garlic clove, peeled
1 cup dry white wine
1 tablespoon lemon juice
1 tablespoon cherry brandy, such as kirsch
1/2 teaspoon dry mustard
Pinch nutmeg
Assorted dippers

Directions:

In a small bowl, coat the cheeses with cornstarch and set aside.  Rub the inside of the ceramic fondue pot with the garlic, then discard.

Over medium heat, add the wine and lemon juice and bring to a gentle simmer.  Gradually stir the cheese into the simmering liquid.  Melting the cheese gradually encourages a smooth fondue.  Once smooth, stir in cherry brandy, mustard and nutmeg.

Arrange an assortment of bite-sized dipping foods on a lazy Susan around fondue pot.  Serve with chunks of French and pumpernickel breads.  Some other suggestions are Granny Smith apples and blanched vegetables such as broccoli, cauliflower, carrots and asparagus. Wine Tasting for Dummies 101 / Our beginners class for Wine Tasters.  This is a good class to take if this is your first visit to a winery and want to know the basics of wine tasting.  You will taste three wines paired with delicious gourmet cheeses and dark chocolate toffee.  You will also get to sample eight of our infused Avocado Oils and Balsamic Vinegars that are only available at Oak Mt. Winery.

Rhone Wine Class 201 / Our second, more advanced class after taking Wine Tasting 101 is our Rhone Wine Tasting Class 201.  Learn how these grapes are grown here in the valley and how wine is made, while tasting varietals from different areas in the Rhone region of France.  Just like the 101 class, you’ll get 3 wine tastings and 8 tastings of Avocado Oil and Balsamic Vinegars.

Wine Country Recipe: Roasted Duck Leg with Black Currant Sauce and Roasted Turnips

Roasted Duck Leg

A tart, slightly sweet currant sauce complements and adds bright flavors to these crispy duck legs and roasted turnips.  Pair with your favorite Temecula Valley Cabernet Sauvignon or Zinfandel.

Serves 2

Ingredients:

4 (8-ounce) duck legs, skin on, excess fat removed
2 teaspoons fresh thyme leaves, divided
2 medium turnips (about 10 ounces), peeled and each cut into ten wedges
1 tablespoon finely chopped shallots
1/3 cup balsamic vinegar
1/3 cup black currant preserves
1/4 cup water
2 teaspoons unsalted butter
Salt and freshly ground black pepper

Directions:

Preheat the oven to 375 degrees with a rack in the upper and lower third.  Sprinkle both sides of the duck legs generously with salt and pepper and 1 teaspoon of the thyme leaves.

Heat a large, heavy-bottomed skillet over medium-high heat until very hot, but not smoking.  Add the duck legs, skin side down, and sear for 4 minutes.  Turn the legs and sear 1 minute.

Transfer the duck to a medium roasting pan, skin side up.  (Reserve the duck fat in the skillet for later use.)  Cover the pan and roast the duck for 1 hour on the upper rack.  Uncover and roast for an additional 15 minutes.  While the duck is roasting, spread the turnips in a single layer, in another roasting pan. Drizzle the turnips with 2 tablespoons of the reserved duck fat.  Sprinkle with salt and pepper and the remaining teaspoon of thyme leaves.

About 35 minutes before the duck is done, put the turnips in the oven, on the lower rack, so that the duck and the turnips will be ready at the same time.  When the duck is ready, let it rest while you make the sauce.

To make the sauce, remove all but 1 tablespoon of duck fat from the skillet used for searing. (If there is less than 1 tablespoon left, just use what is left.)  Heat the skillet over medium-high heat.  Add the shallots and cook and stir for 30 seconds.  Add the balsamic vinegar and simmer for 1 minute.  Add the black currant preserves and water and simmer for 30 seconds.  Turn off heat and whisk in the butter.  To serve, spoon the desired amount of sauce on 2 plates and top with 2 duck legs.  Arrange the turnips next to the duck.

Blending Reds – Create, bottle and label your very own blend / In our Blending Class, you get to be the Winemaker! Wine Tasting for Dummies 101 / Our beginners class for Wine Tasters. This is a good class to take if this is your first visit to a winery and want to know the basics of wine tasting. You will also get to sample eight of our infused Avocado Oils and Balsamic Vinegars that are only available at Oak Mt. Winery.
