And Here’s How It All Began…

In the 1850s, Temecula became a stop on the stagecoach lines that were becoming the logistical route of choice in California. So popular was this route, a post office was set up in town which was a rare institution in California at the time. Settlement increased during the late 1860s as displaced Confederates moved West in the wake of the Civil War.

Because of the region’s isolation, Temecula retained many of its Native American, Spanish and Mexican customs and culture long after California was ceded to the United States. Throughout time, however, Native American lands were being purchased or seized and in 1875, the final blow was delivered when tribal nations signed a treaty relinquishing the remainder of their land in the Temecula Valley. A decade later, the Native Americans who remained were relocated to the Pechanga Reservation.

The railroad line boosted Temecula’s economy when the route was extended to the region in 1882. Unfortunately, the line was abandoned later that decade due to damage from incessant flooding. The major industries during these years were stone quarries, cattle and shipping. During the American Prohibition of the 20s and 30s, the Temecula Valley operated its share of bootlegging and speakeasies.

In 1904, Walter Vail arrived in Temecula and bought nearly 90,000 acres in the region. His family would do much to influence and shape the town during the first half of the 20th century. The Vail family’s biggest achievement was damming the Temecula River and creating Vail Lake in 1948.

In 1961 Mahlon Vail had been successfully operating the enormous Vail Cattle Ranch for nearly six decades. He was in his seventies and his health was failing. With no immediate heirs Vail began actively seeking a buyer for the ranch. One of those potential buyers contacted Richard Break, an experienced farm manager and broker from Fresno. The buyer wanted his professional opinion on the feasibility of growing citrus on the property. After reviewing temperature records for the Temecula area kept by the University of California at Riverside, Break became convinced that the climate and soil conditions in the valley were better suited for the growing of wine grapes.

In 1964 Vail successfully completed negotiations on the sale of the ranch to Kaiser Industries and Macco Realty, who together formed the Rancho California Development Corporation. Throughout 1965 the development company mapped out its plans for a “Master Planned Community.” The community would include commercial and industrial sites as well as residential and agricultural development. The campaign attracted the attention of a number of notables including then California Governor Ronald Reagan, who purchased a sizable portion of the Santa Rosa Plateau.

Another Hollywood couple who saw an opportunity to pursue a long-held dream of retiring to a sizable estate with a comfortable Mediterranean style adobe was Vincenzo and Audrey Cilurzo. In 1967 they purchased 40 acres of property down a long dirt road known as Long Valley Road (soon to become Rancho California Road). The Cilurzo’s established the first modern commercial vineyard in the Temecula Valley in 1968.

In 1974, the founding of Callaway Winery (by Ely Callaway, of golf fame) marked the beginning of large production winemaking in the Temecula Valley. Callaway, sold the winery in 1981 to Hiram Walker and Sons. John Poole opened Mount Palomar Winery in 1975, and in 1978 the Cilurzos opened another Temecula winery at a new site. Their original vineyard, Temecula’s oldest, is now owned by Maurice Carrie Winery. Today, there are over 40 wineries in the Temecula Valley.

Though Temecula became an incorporated city in 1989, the region officially became an American Viticultural Area (AVA) in 1984. Modern Temecula Wine Country is located east of the Rainbow Gap in Riverside County and the Temecula wine community has grown considerably since its humble beginnings.

How Our “New Normal” is Actually a Better Normal

Cheers to 2021!

Well, the day we never thought would come finally did, and 2021 is officially in full swing. While the world is still a bit topsy turvy, and so much uncertainty remains, the start of a new year seems as good a time as any to look back on lessons learned, and contemplate what comes next.

Temecula Valley Wine Country went through a roller coaster of changes in 2020, as we implemented new policies to keep our customers and staff members safe, and experimented with creative ways to keep you engaged. While some changes we will be happy to say goodbye to when things get back to normal, some new practices we may hang on to just a little bit longer, if not forever, because, well… we kind of like them.

Change can often be uncomfortable, but it isn’t always a bad thing. So, in celebration of flexibility and fresh new starts, we would like to share the top five things that came out of 2020 that we will not be saying goodbye to in 2021.

  1. Reservations and Seated, Guided Tastings

When wineries were asked to implement social distancing protocols by limiting visitor numbers and requiring spacing among tables and tasting areas, reservation systems and more formal seated tastings made it easier to manage customer flow, while still ensuring a pleasant experience for guests.

What many of us realized in the process was that these guided tastings allowed us to get to know our customers better, and gave our guests more opportunities to ask questions, and learn more about our wineries and the wines in their glasses. While we look forward to welcoming guests back to our communal – and convivial! – tasting bars, we don’t anticipate our wineries giving up the more intimate, seated, guided tasting format any time soon. In fact, we look forward to new ways our wineries can use this type of experience to educate and entertain Temecula Valley visitors!

2. Taking Things Virtual

Why just get a bottle of wine when you can get a bottle of wine and meet the winemaker… virtually, from the comfort of your living room couch? 2020 was the year of the Zoom happy hours and virtual experiences and boy did we have fun with these! From virtual winery tours to wine club parties to educational tastings and more, Temecula Valley wineries took to the Internet to meet their fans and share their sips and stories.

Not only has this been a great way for us all to stay in touch with customers, but it has also been a way for us to make new friends across the country. We know wine lovers in other states and cities may not be able to visit us all the time, but Temecula Valley wineries can ship wine to just about any state, and the Internet knows no state lines! We can’t wait to see you on our computer screens over a glass or two of wine soon.

3. Trying New Wines

Nothing makes you crave new things quite like being stuck in your house, not being able to see your loved ones, and having all your favorite activities canceled for months on end. This boredom led many of us to take up new hobbies, learn different languages, and master new skills.

It led us to branch out of our sipping comfort zone to give some of those hard-to-pronounce grapes (hello, Falanghina!) a try. One of the most beautiful things about Temecula Valley is that we grow dozens of different varieties that all thrive here thanks to our Southern Californian Mediterranean climate. We know we won’t be losing that sense of adventure when it comes to wine discoveries in 2021; we hope you will keep up the curiosity as well!

4. Cool New Events

Temecula Valley is known for some pretty amazing events year-round thanks to gorgeous vineyards, stunning properties, and nearly 365 days of sunshine. When social distancing and outdoor tasting and dining requirements were put in place, Temecula Valley wineries had to get really creative when it came to event planning. The result? Fun new outings like drive-in movies, socially distanced yoga, and intimate (but at totally spaced-out tables) wine dinners among the vines.

Temecula Valley wineries have always thought outside the box when it comes to interesting grape blends, planting new varieties, and producing exciting wines. We are excited to see what’s next on the event horizon once things open back up. Hopefully some of these new, creative event concepts stick around, because there are few things better than sipping a bottle of your favorite Temecula Valley wine from the flatbed of your truck while watching “The Sandlot” on the big screen at sunset.

5. Gratitude

We’ve said it once, and we will say it again. We could not have gotten through 2020 without our loyal and supportive customers and visitors. We have also been reminded of the power of a simple thank you; of taking time to acknowledge those around us who keep us smiling – and afloat. Many Temecula Valley wineries have said thank you with special offers, discounts and promotions on wine, dining and shipping. No doubt we will continue to see these in the coming months. But we will never stop feeling grateful for YOU, and all that you as visitors and fans do to make our Wine Country so special.

A Reflection on The Past Few Months And A Big Thank You to Our Consumers

As Temecula Valley Southern California Wine Country begins the slow and careful process of welcoming visitors back to wineries and restaurants safely after this long break, we are all taking a minute to reflect on what the past few months have taught us, and what the future holds for our wine region.

Here are the top three things we have learned:

  1. Temecula Valley is resilient.
    From its humble start as a one-stop-sign town to its current status as one of the world’s top wine destinations, Temecula Valley has come through a lot in its relatively short 52-year history. The region has battled drought years, a near extinction thanks to a nefarious vineyard pest in the 90s, tough competition from other wine regions, and now a major shut-down that has been particularly hard for a place that relies on visitation to stay afloat.

    And yet Temecula Valley always seems to emerge stronger than ever. Much like the Pierce’s Disease situation that nearly wiped us out forced us to invest in the research and tools to transform vine planting, grape growing and winemaking in the region, so has the current situation surrounding the pandemic encouraged us to regroup and find new and creative ways to reach our customers.

    The people of Temecula Valley are light on their feet when it comes to pivoting, and it is one of the biggest keys to our resilience. Many of you have probably taken part in the dozens of virtual wine tastings our wineries have been hosting, or taken advantage of the great packages and partner offers that they have pulled together for customers. Many of you have watched as our winemakers and tasting room staff have taken their cameras and laptops to the vineyards and barrel rooms, offering virtual tours and the chance to get to know them better. If you are interested in podcasting your own shows, then the best laptop for podcasting is obviously the one that will support your media files. This nimbleness is what has allowed us to keep your wine country alive through these challenging times.

    We know we will be faced with other obstacles in our future. And we know we will band together to come through them as we always do – stronger than ever.

  2. Our community is all heart.
    Almost without exception, the moment the stay at home orders were announced, our wineries started to not only figure out ways to support their employees in the face of layoffs and furloughs, but they found ways to give back to the community as well.

    South Coast Winery Resort & Spa and Carter Estate Winery and Resort contributed 50% of online wine sales to provide food and other provisions to furloughed staff members. Fazeli Cellars took 50% of the proceeds from bottles of their 2014 Mehregan and 2018 Norooz sold to go directly back to employees to help with expenses. Leoness Cellars and others created similar programs.

    Mount Palomar Winery not only did a social media promotion for healthcare workers, but they also donated bulk wine to several distilleries to create hand sanitizers.

    Robert Renzoni Vineyards, who had to furlough 40 of their 47 employees as a result of the shelter in place orders, began selling “Employee Support Packs,” with 50% of the proceeds going back to their employees. The Renzoni family also donated 50 generously sized hams for employees to pick up, along with a bottle of wine.

    Doffo Winery organized weekly grocery boxes for their team, while Palumbo Winery donated several cases to the Cocina Urbana group in San Diego and to Goat and Vine in Temecula to give to chefs and wait staff who had been furloughed.

    Wilson Creek Winery donated 50,000 wine tasting tickets (to the tune of $1.25 million) to healthcare workers in Riverside and San Diego for redemption once they are back open. They also donated 1,000 bottles to Temecula Valley Hospital.

    Peltzer Family Cellars donated 300 bottles to the Temecula Valley hospital healthcare workers.

    This is just a handful of ways our community has stepped up and given back during the COVID-19 pandemic. No matter how tough things get, we always look out for each other, and other communities in need.

  3. Our friends and fans are loyal… and the only reason we are all still here today.
    These past few months have been tough on everyone. But your support – whether it was maintaining your wine club membership, joining us for virtual tastings, ordering wines online or over the phone, engaging with us on social media, or simply reaching out to say hi – has gotten us through this.

We cannot thank you enough for your ongoing loyalty to our wineries and the Temecula Valley region in general, and we cannot wait to see your smiling faces back in our tasting rooms and restaurants hopefully very soon.

Perfect Pairings: Pumpkin & Wine

October….it’s the time of year we’re dragging the kids to the neighborhood pumpkin patch, decorating the house for fall and for some of us, already thinking about all of the yummy pumpkin recipes we want to make. From pumpkin soup, to pumpkin pie and everything in between, we’ve got a wine that will pair with it! Here are some tips for pairing wines with your favorite pumpkin dishes.

en the cold weather returns, there’s nothing better than a nice, big, bowl of soup. This time of year, pumpkin soup is a good choice. We’d most likely pair our soup with Chardonnay, Viognier and even Gewürztraminer. For you red lovers, try a Cabernet or Merlot. Try these: South Coast Winery 2017 Reference Chardonnay, Thornton Winery 2017 Viognier, Frangipani Estate Winery 2015 Cabernet Sauvignon, Lorimar Winery 2016 Merlot.

Pumpkin Risotto would pair well with Sauvignon Blanc, Pinot Gris and Chenin Blanc. You may want to eat the whole bowl of risotto by itself (and we wouldn’t blame you), but it makes for a great side dish with roasted chicken too. Try these: Hart Winery 2016 Sauvignon Blanc, Robert Renzoni Vineyards 2017 Pinot Grigio “Julia’s Vineyard”, Maurice Car’rie Winery 2017 Chenin Blanc.

And, for our personal favorite….Pumpkin Pie. There are endless possibilities here. A Riesling or Muscat would be amazing. Better yet, get in the holiday celebrating mood and pop open a bottle of bubbly to enjoy with your pie. Real Temecula Winemakers Drink Pink: Our Top Picks for Temecula Valley Rosé this Summer

Rosé wine and the perfect pairing of cheese and fruit

Rosé all day. Yes way rosé. Stop and smell the rosé. You’ve probably heard them all, or seen them while scrolling through your Instagram feed, usually accompanied by gorgeous pics of glasses brimming with baby pink liquid being sipped by glamorous folks with designer shades and trendy outfits. The bottom line is that rosé is on the rise in a big, big way. 

“’Rosé All Day’ is not just a hashtag, it’s a cultural movement sparked by Instagram,” notes Alpana Singh, Master Sommelier in Business Insider. And the numbers don’t lie. In 2017 rosé sales were up 53% in the U.S., according to Nielsen, while wine sales overall increased by just 4%.

The pink stuff is here to stay, which is a good thing. Rosé is incredibly versatile, coming in a full spectrum of hues from barely-kissed blush to deep raspberry and everything in between, as well varying levels of dryness and a diverse range of flavor profiles from crisp and clean to luscious and mixed-berry-driven. It’s remarkably food friendly, a happy in-the-middle option with the ability to pair well with things that go with whites and reds. It’s also fun. While there seems to be a distinct rosé season – late Spring to early fall – the increased demand for drinking pink has opened up rosé for year-round drinking, with many retailers offering full sections dedicated to dozens of different selections.

We in Southern California feel right at home sipping rosé any day from January to December. It’s a drink that marries well with sunny days and a laid back SoCal spirit. Happily, Temecula Valley Southern California Wine Country produces some truly outstanding bottles and has been doing so for quite some time. In fact, in 2001, in an article about the importance of supporting local wineries, the Wall Street Journal described Temecula Valley’s Hart Winery, saying they “Make one of America’s best rosé.”

When we asked Jim Hart what makes Temecula Valley rosé so special, he explained that, “It’s because it’s not produced as an afterthought. It’s produced to be a rosé. That’s why it’s so good. It doesn’t actually make sense to make rosé in Temecula because our fruit is too expensive to not go toward making reds. So when we take that high quality fruit and intentionally make a rosé with it, the result is amazing.” Jim says they pick their fruit early and then treat and ferment the wine like a white, which results in deeply expressive, high quality wines.

Here are a few of our favorite Temecula Valley picks for this rosé season and beyond.

Hart Winery Rosé of Sangiovese

Sangiovese is one of Italy’s flagship wine grapes and shines just as brightly in Temecula Valley. It is also a delight when used to produce rosé. To make this award-winning wine, Hart used a cold pre-soak followed by pressing, and a low-temperature white wine fermentation. The result is a lightly pink, near-dry, delicately scented and flavored rosé, bursting with strawberry and watermelon notes on an elegant, floral backdrop. Excellent with a wide range of foods, and a great summer sipper.

South Coast Winery Rosé of Tempranillo

Multi-award-winning and the only American rosé to earn a Double Gold at this year’s 50 Best rosé tasting, this wine is made from a blend of two different Iberian Peninsula clonal selections of Tempranillo (one Spanish and one Portuguese). Some of the fruit was machine harvested and quickly drained and pressed, while a portion was hand-picked and whole cluster pressed. The two lots were then blended prior to fermentation. The result is a wine with beautiful extraction and color, youthful acidity and great structure, offering ripe strawberry, sweet blackberry and watermelon notes. It is a wine with focus, finesse and elegance, showing wonderful varietal characters while remaining fresh and enjoyable.

2018 Robert Renzoni Vineyards Lyric Rose, $29

This is one of those amazingly quaffable wines that you could drink for breakfast, lunch and dinner. Ballet slipper pink and perfectly dry, this summer sipper is made from 100% Syrah. It boasts delicate notes of Ranier cherries, fleshy white peach and rose petals that give way to rich flavors of guava and melon. A delightful aperitif wine, meant for sipping by the pool or as you stroll Temecula Valley vineyards.

2018 Akash Winery Parlez Vous Rosé, $35

This intensely hued rosé, packaged in a stand-out, uniquely shaped bottle, is impossible to miss. Made from Temecula Valley newcomer, Akash Winery, this is a complex rosé that demands attention. A massive onslaught of aromas burst from the glass, displaying crushed raspberry, cranberry and strawberry notes, followed by watermelon Jolly Rancher and kaffir lime leaves. But don’t let the sweet, ripe bouquet fool you. On the palate, this rosé is completely dry, with a plush, almost grippy mouthfeel and an endless finish, making it a truly versatile food wine, capable of standing up to heartier fare and meat-based dishes. 

2018 Ponte Pas Doux, $28

“Pas Doux” translates to “not sweet,” a descriptor that lets the drinker know this wine, made from old vine Sangiovese, was intentionally made in a classic, dry, Provençal style. The grapes were harvested at sunrise rather than in the dawn twilight in order to select the lightest clusters.  The light juice was then full-cluster pressed directly to tank, and briefly cold-stored in stainless steel to retain and develop the structure and brightness. The Rhône yeast used for fermentation achieved warmer temperatures than expected, resulting in a rich, round palate and ultra-tropical ripeness.  In the bottle, this juicy rosé is a dynamic, rich, dry and complex yet focused wine.  The crisp acidity makes it a match for light fare, poultry, seafood and salad, but it can also stand up to hard, robust cheese and dried fruits.

2018 Wiens Family Cellars Rosé of Barbera, $26

We can’t get enough of the soft peach color of this elegant rosé, made from 100% Barbera, a grape that truly lends itself to rosé -making thanks to its ability to retain bright acidity. At only 11.5% alcohol it’s a great poolside or picnic sipper, but equally at home paired with an elegantly prepared dinner. Notes of ripe pink grapefruit, wet river stones, key lime and rose petal give way to mouthwatering peach and nectarine and a dry, lingering finish. 

2018 South Coast Winery Vineyard Rosé Sparkling Wine

It’s tough to talk about Temecula Valley rosé without mentioning bubbly. This wine, a blend of 52% Zinfandel 38% Tempranillo and 10% Merlot, captures the seductive fruit aromas and flavors from the three red varietals used in its creation. The estate grown grapes were specifically selected for their inherent red berry fruit character and their ability to work together in a blend. Each lot of fruit was whole cluster pressed and fermented separately prior to blending and secondary fermentation. Strawberry, raspberry and cherry rise out of the glass with each tiny bubble, making this wine a real “Jolly Rancher” treat. Finished as a Brut style, this wine has a very clean, bright acidity which makes it balanced, refreshing and inherently drinkable.

Plan Your Mid-Week Visit

Whether you can get away overnight, or just want to take a day trip, a mid-week visit to Temecula Valley Wine Country should prove to be a relaxing and enjoyable break.

There are many advantages to visiting wine country during the week. Much less busy weekdays are the perfect opportunity to allow yourself time to enjoy our 35+ member wineries’ offerings. At a slower pace, you’ll be able to enjoy more one-on-one time with the knowledgeable wine servers (or even the winemakers and/or winery owners themselves if you’re lucky) at each of your stops.

It’s Finally Summer! What Wines are YOU Drinking?

Summertime Sipping!

While the weather this year has taken a little bit longer than usual to get its act together, and brought lots of rain along with it, the sun is finally starting to heat things up, shorts are moving from the back of the dresser drawer to the front, and grape vines are looking green and full. You know what this means? It’s officially summer wine time.

Temecula Valley Southern California Wine Country is certainly known for its rich, full-bodied red wines. However, it’s also home to some pretty incredible whites, rosés, sparkling wines and lighter-style reds. Here’s a few of our favorites for sipping out on the patio on a warm summer afternoon, or while backyard grilling with your friends… or for any occasion, really.

Sparkling:

Carter Estate 2014 Blanc de Blanc Brut, $40

Why we love it: This crisp, clean, bone-dry bubbly is made in the méthode Champenoise, AKA how they do it in the most famous sparkling wine region of the world, Champagne. Oak Mountain Brut NV, $25

Why we love it: Oak Mountain has taken Temecula Valley Roussanne – one of the Rhône Valley’s signature white grapes – and made it sparkle. The result is a pleasantly floral, fresh wine that is delightful as an aperitif or paired with a wide range of cuisines. The beauty of bubbles is they go with just about everything… including nothing at all but the sun on your face and the breeze in your hair.

White:

Danza del Sol 2017 Vermentino, $28

Why we love it: Close your eyes and you are in Italy with this bright, juicy Vermentino, a grape that is equally at home in Temecula as it is in Sardinia, Liguria and Tuscany. Notes of ripe, fleshy stone fruit, lime zest and white flowers give way to a clean, oyster shell finish. The very definition of “quaffable.”

Doffo Winery 2018 Viognier, $32

Why we love it: Viognier shines in Temecula Valley and this bottling is no exception. While Viognier can at times be heavy, luscious and slightly oily, Doffo Winery has captured all of the floral aromatics of the grape variety while maintaining citrusy freshness and a delicate minerality thanks to fermentation in concrete tanks. The result is a light, clean, elegant wine that belongs on your summer dinner table. 

Rosé

Akash Parlez Vous Rosé, $33

Why we love it: Don’t let the deep, almost magenta color fool you – this rosé, made from 100% estate Zinfandel, is light on its feet and bursting with juicy strawberry, red currant, and watermelon Jolly Rancher notes giving way to a totally dry, lime zest finish. Pair this with cedar planked salmon and a sunset.

Hart Winery 2018 Rosé of Sangiovese, $22

Why we love it: Sipping this wine, you could be strolling through Provençal lavender fields with a straw hat and a picnic. We would argue Temecula Valley is just as pretty, and this wine just as perfect as any rosé we’ve tried from Provence. Pale, baby pink in color, with notes of warm, ripe strawberries and raspberries, violet petals and an elegant, wet river stone finish. This is one we could drink all day and well into the night.

Red:

Europa Village 2016 Vienza Montepulciano, $35

Why we love it: Another example of how well Italian grape varieties thrive in Temecula Valley. This Montepulciano is surprisingly light-bodied, with bright red fruit, a touch of baking spice and a soft, warm finish, like the lingering sunshine as you recline in a hammock with a good book at the end of a mid-summer day. A wine made that practically begs for food, you could even try serving this with a very slight chill on it.

Baily Winery 2014 Meritage, $65

Why we love it: If you simply must have a rich, complex red, even during the hottest summer months, then Baily Winery is your go-to for highly structured, elegant red wines. Meritage is their flagship bottling, and they have a library selection that dates back over a decade. A stunning blend of classic Bordeaux grape varieties, this wine is lean but powerful, with ripe berry fruit, plum, sweet baking spices and an intriguing tobacco note.

While all of these wines can be purchased online or direct from the winery, the summer months are a fantastic time to visit Temecula. Dungeness Crab Frittata

Planning a brunch for Mother’s Day? This recipe would be a hit with Mom! Slice this frittata into thin wedges for a passed hors d’oeuvre or serve more generous portions with a tuft of salad as a first course. To dress it up, top wedges with a dollop of crème fraîche and California sturgeon caviar. Pair with your favorite Temecula Valley Chardonnay or Sparkling Wine.


Serves 6

Ingredients
½ pound (250 g) fingerling potatoes
1-1/2 tablespoons plus 1 teaspoon extra virgin olive oil
Kosher or sea salt
6 large eggs
Freshly ground black pepper
2 tablespoons chopped fresh dill, plus more for garnish
1 tablespoon thinly sliced fresh chives
¼ pound fresh Dungeness crabmeat

Directions
Preheat the oven to 425°F (220°C). Put the potatoes in a baking dish just large enough to hold them. Drizzle with 1 teaspoon olive oil, season with salt, and turn to coat with the oil and salt. Bake until tender when pierced, 15 to 20 minutes. Let cool, then slice into ½-inch (12 mm) pieces. Reduce the oven temperature to 400°F (200°C).

In a bowl, whisk the eggs with ½ teaspoon salt, several grinds of pepper, and the dill and chives. Stir in the crabmeat and potatoes, reserving a few larger pieces of crab for placing on the surface of the frittata later.

Heat a 10-inch nonstick skillet over medium-low heat. Add the remaining 1-1/2 tablespoons olive oil. When it is hot, add the egg mixture and use a rubber spatula to distribute the crab and potato evenly. Cook without stirring for about 2 minutes, until the eggs begin to set, then place the reserved chunks of crabmeat on top. Continue cooking without stirring until the frittata is about two-thirds set, with some patches of liquid egg on the surface. Transfer the skillet to the oven and bake until the surface is firm to the touch, about 6 minutes longer.

Remove from the oven and slide the frittata onto a cutting board. Let rest at least 15 minutes. Garnish with chopped dill, then slice into wedges and serve. The frittata is best warm, not hot.
